not sure where the rules for this are, but lets say for instance that enemy mage casts empowered fireball at your group, can you still used regular fireball to counter it, or do i need fireball with the same metamagic?

I believe metamagic has no effect on counterspelling but I'll check as I'm not sure.

Edit: Checked metamagic isn't taken into account.

Counterspelling Metamagic Spells
Metamagic feats are not taken into account when determining whether a spell can be countered (http://www.d20srd.org/srd/magicOverview/castingSpells.htm#counterspells)

It's right there in "Magic" -> "Counterspell" of PHB.
