I know I saw them around somewhere, can anyone direct me to what book the stats are for mindflayer characters?

Check Lords of Madness, your friendly guide to face suckers, brain eaters, body snatchers, mind shredders, and other generally unpleasent things.

Otherwise, the MM has more info, but illithid explicitly aren't in the SRD due to restrictions in Intellectual Property laws.

In savage species, there is a prestige class that requires mind flayers, I was hoping to make the next BBEG a mind flayer with this class. That and in the future i's like to try this class...if possible

The actual psionic illithids are in the Expanded Psionics Handbook, where they belong.

Young Neutral evil sorcerer with large charisma score looking for mind flayer cabal for group activities. My mage tower is very large and well suited for your group. Clean tentacles a must. Must be willing to extract brains and engage in dark rituals. Please no neolithids.

They're in the Monster Manual. Monster Manual V has the Mind Flayers of Thoon, which actually provides a lot of variety in illithid encounters and supplies enough cool things to fuel entire mind flayer-centric campaigns (including a reasonable CR-ed elder brain). Expanded Psionics Handbook contains psionic mind flayers (well, psionic mind flayers that use the real psionic rules) as well as neolithids (gargantuan worm-like creatures with tentacles and SLAs). Lords of Madness has large amounts of unnecessary information on illithids, as well as other creatures from wherever illithids are from, in addition to super-illithids (ulitharids), mind flayer vampires, and mind flayer liches called alhoons. There are other things scattered elsewhere but MMV, LoM and EPH are the main illithid sources.
