I don't actually play D&D (Hoping to get it for my birthday, though!) so all I know about it is from OOTS. So, if this is a stupid question, don't mock me please.
Q: What spell can undo locks/chains, and what level is it?

Knock (http://www.d20srd.org/srd/spells/knock.htm), 2nd level.

And BTW is not a stupid question.
EDIT: never hoped to avoid ninjas.

Would that work on things like being chained to a wall in a local jail, or just doors/chests etc.?

Mr SRD says:
The knock spell opens stuck, barred, locked, held, or arcane locked doors. It opens secret doors, as well as locked or trick-opening boxes or chests. It also loosens welds, shackles, or chains (provided they serve to hold closures shut).
Also, if undoing multiple locks/whatever, would you have to cast it multiple times?
Mr SRD says:
Target: One door, box, or chest with an area of up to 10 sq. ft./level
So, yep: multiple castings required for multiple locks.

One last question: when undoing multiple locks/whatever, would you have to cast it multiple times?

Not totally clear, actually. There might be a better spell for that purpose. "It also loosens welds, shackles, or chains (provided they serve to hold closures shut)" - might only open chains that are chaining a door or chest shut.
Also, if undoing multiple locks/whatever, would you have to cast it multiple times?
"Each spell can undo as many as two means of preventing egress."

Also, you could invest in the Open Lock (www.d20srd.org/srd/skills/OpenLock.htm) Skill, or Escape Artist (www.d20srd.org/srd/skills/escapeArtist.htm) (if you don't care about freeing your friends. Or you roleplay creatively, and try and get the guard to unlock you. Or you could cut a deal with your captor. There's probably a hundred different ways, as it's a somewhat common occurrence in D&D games.
You could also use Freedom, but that's a ninth level spell.
