Ok, In a star wars campaign upcoming, there is a Jedi level 1. Does this mean, In a first level game, we have a seventh level jedi walking around? How do you Gm's handle this

...What?

Level 1 Jedi are Padawans. Jedi who have made their own lightsabers (heroic level 7) and gone through the trials are Knights. Master is a title of distinction. The classes that correspond to Knight and Master teach the typical skillsets of both, but don't define them.

I mean the padawans are led by jedi knights. Thus the jedi knights being there masters. The knight usually follows the padawan around

I usually have the master send the PC on a solo mission. It really depends on the campaign.

Also isn't it the Jedi Masters(as in the rank) who train padawans?

no, Obi Wan kenobi was only a knight when he trained Anakin

To become a Master, one of the requirements is successfully training a Padawan.

This is a bit of an issue in the Old Republic era, admittedly. The ways to deal with it depend upon the plothook.

First of all, the practices of the Jedi vary somewhat from era to era.

Second of all, it's not that uncommon in any era (AFAIK) for padawans to be sent on missions without their master's oversight from time to time. It's generally considered a test of their independance.

Different masters teach different ways. Some masters will always be with their padawan, while others will be more of a source of advice and wisdom but otherwise let their charge do as they wish.
