I see people using use magic device on classes such as monk where it is a skill that ordinarily cannot be used untrained, how do they achieve this? Is it through feats such as magical aptitude?

Simple, they buy skill ranks cross-class. All you need to be trained in a skill is to have at least one skill rank in it, and all not having a skill on your class list means is that ranks cost double and your maximum ranks are halved.

You can take any number of feats to make something an in-class skill. Try crystalkeep.com and open up their feats .pdf file. They're sorted by type.
