When they say 10 ft square does that mean 4, 5 foot squares and a 15 foot square would be 9, 5 foot squares?

Yes I would believe so. But I think that AoE spells are generally listed "10ft. radius" meaning a "circle" with a 10ft. radius starting from a corner. You should really look in the DMG glossary for this.

A 10-foot square is a square area that is 10' x 10' in dimensions. This is equal to 4 normal squares.

Similarly, a 15-foot square would 15' x 15' or 9 normal squares.

Oh, and Krazd, there are plenty of area spells that don't have radius burst/spread shaped areas, such as grease which fills a 10-ft. square, or soften earth and stone which affects one 10-ft. square per level.
