How do they differ beyond object vs creature?

Yeah -- hardness works against most "magic" type damage, including fire/cold/acid/electricity. DR does not.

Ok, anything else (beyond "a pick wielded by a commoner can't pierce stone" stuff)?

Energy reacts differently to the two, and DR usually has conditions to bypass it.

i will point out that adamantium is in a way a condition to bypass most hardness

As are certain ToB maneuvers. However, DR has a built in mechanism for bypass, in most cases.

Whether that's <Magic>, <adamantine>, <silver>, <cold iron>, or <epic> is another story.

Or <slashing>, <piercing>, <bludgeoning>. Or DR/- (no bypass). (Or others, but those are the most common.)
