Golems all have a Charisma score of 1. What happens if a construct has it's Charisma reduced to 0? With the Knife to the Soul class feature from the Soulknife for example. It seems like a 'glass jaw' sort of a situation.

A Charisma of 0 means you're unconscious. All of the Ability 0 states are various forms of helpless (other than Con 0, which is just dead).

As opposed to Cha -, which makes you an object.

But a construct *is* an object. It has a Con and Int score of '-'.

No, it's a non-living, non-intelligent creature. Objects have no stats other than hardness, hit points and maybe saves.

Creatures immune to mind-affecting effects are immune to psychic strike damage.
Immunity to all mind-affecting effects

Combine in any way

Are there any ways to cause Charisma damage without using a disease, poison, or mind effecting ability?

No, a Construct is a Construct type. Objects lose their Str and Dex score (they can't move, not alive, etc). Not all Constructs are Int "-", but all have Con "-".

Without Charisma, it is knocked unconscious.

Are constructs vulnerable to ability damage in PF?

If you adapted Nightmare Spinner to Psionics and the Mindless Adaptation version.
he adaptation listed says you instead of removing fear immunity remove mindless immunity (so even Mindblank is useless).
Then you can ego whip them to 0 Cha.

But that requires:
A. a Lenient Dm to let a Psionic manifester qualify for arcane Prc
B. Using the adaptation.

Constructs are immune to ability damage. Doesn't work even with the lenient DM.
