Is there a monk varient without flurry of blows? I realize that that is a main flavor for monks as martial artists, but I am curious to see what it can be substituted with

You can trade it for Decisive Strike (PHB 2)

You could also take Battle Dancer (Dragon Compendium) instead of Monk for a different martial artist approach (think capoeira instead of kung fu).

Yep, there are only the PHB2 one and some Kalashtar sub levels that allow you to augment grapples and stunning fist for power points, neat for talshatora (or however you spell it) monk 2/psy warriors

it's kinda like a monk, but is actually completely awesome

There is a halfling substitution monk that gets skirmish instead of flurry. As a DM, I would just let any player who wanted to trade flurry for skirmish.
