So I was going to toss a REALLY old Beholder at my players(level 5-6). So how can I make a Beholder be old, like cataracts and no teeth old, but still be very threatening.

Make it's attacks 'Burst 1 within range 8', but weaken them, to represent it's lack of ability to focus it's eyes properly.

Lords of Madness has some beholders get much more powerful, rather than weaker, as they get older- Elder Orbs.

That said, not all get more powerful.

Because that brings up the subject of the Beholder "Birds and the Bees," and nobody wants to talk about that.

The scariest part is that it actually involves birds and bees.

Cataracts dilute your vision into blurryness...so instead of rays, he fires bursts which affect multiple squares. Cut the damage by a fair bit, give it a burst 2 for some of it's eye-rays. Also give it blind-fighting ability and have the PCs fight it in pitch dark. After all, the Beholder learned not to trust it's eyes, so it learned to fight without them in order to keep living. I'd also give it the ability to try and swallow opponents as it's gotta be a pretty big beholder by now
