is there a consolidated list of variant classes from the non core books somewhere? prefereably with a short description of each

Yeah, this (http://www.crystalkeep.com/d20/rules/DnD3.5Index-Classes-Base.pdf) is likely to be the closest you're going to find. But it doesn't have everything (nothing psionic, for example), and it tends to spell out full details instead of listing short summaries.

I'm not criticizing it, as I use it a lot, but I don't understand why crystal keep is legal. Is it because it only summarises and paraphrases rules?

I don't think is is legal, honestly. I just think WotC has sort of stopped caring, since 4e is its baby now.

No, it quotes them outright. Longstanding rumor is that it's some special deal that its owner worked out personally with WotC, because he used to work closely with someone at WotC or something.

The CrystalKeep list is actually a mix of things, with both class variants and ACFs (Alternative Class Features), which they list as "Variant Class Features". For a better list of ACFs you should also check out the Wizards.com Alternative Class Features (http://community.wizards.com/go/thread/view/75882/19872054/Alternative_Class_Features_III) thread.

Nah, the mods here have (inconsistently) discouraged RealmsHelps, saying that some stuff there is illegal, but they've never had a problem with CrystalKeep as far as I've seen.
