Am I right in saying that the sequence and combination of classes matters a lot in gestalt? Especially if you're multiclassing/LA.

For example, if we take Monk//Fighter then Monk//LA, we get full BAB, while Monk//LA then Monk//Fighter nets you only 1 BAB?

And the way saves progress, it is better to have certain pairing.
Say, for Fort, a 4th lvl weak//3rd lvl strong nets you 0 save, while a 4th lvl strong//3rd lvl weak nets you 1 save.

That's why it's so much better to use Fractional BAB and Saves with Gestalt (or, hell, all the time).

If you don't know what they are:

Full BAB (as Fighter): +1/level
Medium (as Cleric): +0.75/level
Poor (as Wizard): +0.5/level

Good Saves: +0.5/level (with an extra +2 at 1st level)
Bad Saves: +0.33/level (round up every three levels, so +0.99 becomes +1)
