I'll have you know that I was about to suggest those very two.

Yuki Kajiura is known for series like Noir and .hack, and Yoko Kanno is probably best known for her work on Cowboy Bebop. I'll note, though, that many of their songs don't have lyrics, so if you're looking for "J-rock" or the like, those won't be it.

As far as openings and closings go..."Real Folk Blues" from Cowboy Bebop, Again (http://www.youtube.com/watch?v=MSlhSJP6TGM) from Fullmetal Alchemist: Brotherhood, and H.T. (http://www.youtube.com/watch?v=GRC-utnnrLA) from Trigun (but no lyrics on that one). Also, this (http://www.youtube.com/watch?v=tfek1ZT0wX4) happens to be my favorite H.T. version, simply because it's one where the guy mixed the Cowboy Bebop opening visuals to H.T.

Yoko Kanno also did the soundtracks for Macross Plus and Macross Frontier. Both animes feature pop singers as major characters, and thus the music includes a fair amount of J-pop (more particularly in Frontier) along with the rest of her awesome instrumentals.

Neon Genesis Evangelion has one of the greatest themes ever (Cruel Angel's Thesis). I also like The World (Death Note opening #1, doubles as a villain song), but I loathe the heavy metal-ish second one.

Yoko Kanno makes bad anime good (Genesis of Aquarion), and good anime awesome (Cowboy Bebop). And Yuki Kajiura is just crazy, in a good way.

The Pillows (FLCL) were mentioned already, Manzo is quirky and fun to listen to, too.

And if you want hot blood, then your best answer is: JAM Project.

I'm not sure I understand why. Just something about it works for me.

And finally, I like Kiss Me Goodbye (http://www.youtube.com/watch?v=srrLospeLdo) and A Thousand Words (http://www.youtube.com/watch?v=KvXtcr1Rv3Q) from the Final Fantasy XII soundtrack. I've only heard the English versions of these.

Funnily enough, Kiss Me Goodbye is from FFXII, but A Thousand Words is from FFX-2; they're different games.

The theme to X ("Sadame") by Satou Naoki's pretty epic. Haven't heard anything else by that composer, but you might want to check it out.

Edit: Also, the entire Gundam Wing soundtrack. Just sayin'.

While she is most commonly known for her work on Cowboy Bebop, Yoko Kanno also did the soundtracks for Ghost in the Shell: SAC and Darker than Black. Both are remarkable and unique.

Stuff from Air Gear. Seriously. The anime itself varies from pretty cool to just bad, but the soundtrack remains stellar throughout. It's actually what got me into J-pop/techno-esque music in the first place. My personal favorite is Love Sensation. If that song does not get you going, nothing will.

I enjoyed the opening themes to Blue Gender and Space Battleship Yamato in addition to many of the ones previously mentioned- and to put things into perspective, I have a fair bit of music from Macross Seven and Macross Frontier on my MP3 player at the moment.

Would go hunt down links, but my sound card is currently dead... and I wouldn't want to give rickrolls by mistake.
