Dragonblood Sorcerers from RotD gain the ability to turn one of their known spells into an SLA. What spells would be the best to turn into an SLA when you first get this ability and then what spells would be good to make SLAs later? Or is it even worth taking this substitution level at all?

I wouldn't do it. It costs a level X and X plus one slot, and in exchange you get a very limited version of 3 slots of level X. If you want to cast that spell more than three times, tough noogies. If you end up only casting the spell once, it cost you a higher level slot.

Invisibility, Charm Person, and Suggestion - things where dropping the components is useful, because you don't want to get caught at it. Also useful for Grease at low-levels (and Dimension Door at high levels - Pinned = Can't speak), if your DM is fond of grapplers.
