I remmember hearing months ago that white wolf did not publish any third circle demons in any of the exalted books, and I wonder if it still stayed that way.

Third Circle-wise, the Book of Sorcery v5 - Ghosts and Demons has stats for:

Erembour, That Which Calls to the Shadows, Seventh Soul of the Ebon Dragon.
Jacint, The Prince Upon The Tower, Eighteenth Soul of Adorjan.
Ligier, The Green Sun, Fetich Soul of Malfeas.

Don't know where you heard there were no statted Third Circle demons, though. That book has been out for well over a year.

In addition to this information, there's blanket information on the traits of Third Circle demons: 18-25 dice to a given pool without Charms, more if it's something the demon is expected to be good at, like Ligier with Craft or Orabilis with Lore.

Amalion, The Manse of Echoes Ascending-Fifth Soul of Malfeas

Benezet, The Gardener of Identities-Seventeenth Soul of Oramus

Ferand, The Chariot of Embers-Seventh Soul of Isidoros

Kagami, The City of Mirrors-Fetich Soul of Szoreny

Lypothymie, The Mask of Melancholy-Twelfth Soul of Hegra

Madelerada, That Which Wears Down the Mountains-Eighth Soul of Kimbery

Seeing as this particular book was originally published back in '09 I would say your source was incorrect.

In addition to the ones mentioned the following Third Circle demons have stat block in the back of The Compass of Celestial Directions: Malfes

Not to mention several non-statted yet detailed "landscape" demons in the same book.
