Cheetahs are pretty awesome low-level mounts - they can charge 500 feet (or more if you boost their speed), meaning that you can deliver a ride-by attack without being in danger before or afterwards.

But they can only do this once an hour. What is the best method for switching out your cheetahs short of surrounding the battlefield with backup cheetahs before attacking?

Is there any way to summon it using Summon Nature's Ally? That would seem like the obvious solution.

Unfortunately, it doesn't appear on the Summon Nature's Ally lists. It's a reasonable creature for SNAII according to CR, but it's not listed.

Speaking practically, cats don't have the proper build to support much weight on their backs. As a DM I'd insist that they were limited to riders 2 sizes smaller, rather than the 1 size smaller rule for equines.

That won't work very well. You need to spend time to use the Train an Animal for a Purpose feature of the Handle Animal skill if you want to be able to ride it.

Size isn't a problem, as jermlaine make quite decent jousters (that, or the cheetah can be Enlarged). The only thing I can come up with is using quickened enlarged benign transposition (with a resultant range of up to 600 feet) to switch out cheetahs underneath you, but this is prohibitively expensive.
