A character that adapts to a given environment simply by being exposed to it for a length of time. Kind of like he changes to reflect his surroundings. If he is in a desert, then if he travels in it long enough he becomes accustomed to it (doesn't suffer heat damage and dehydration). The same for underwater areas, and planar travel as well.

Any way to do this?

Druid (or cleric) with access to the environmental books. There's a spell to handle any environmental hazard, and all they have to do is to ask.

The whole food/water thing isn't much of an issue (http://www.d20srd.org/srd/psionic/powers/sustenance.htm) either.

Finally, Complete Psionic goes on to make the intake of oxygen overrated as well. (Breathless)

Psionics is my most preferred method. You could be an elan and thus skip the need for Sustenance as a chosen power.

A warforged is immune to a lot of things and doesn't need to eat, drink or breathe. Feats can allow it to become immune to non-lethal damage (thus making it immune to nonlethal damage from heat and cold). It is immune to poison and lots of debilitating effects.

Of course, warforged are not really adapting as they are plain immune to a lot of things.

In terms of inherently adaptable classes, Incarnates and Binders are pretty high up. A Psion with the right powers, or a Wizard with the right spells, is the same every day but can handle just about every situation and you don't actually have to cast/manifest them all every day.
