Specifically, I'm wondering if there is a way to get the stat adjustments for rather powerful creatures that just don't have them listed. I'm hoping there's a way that doesn't involve massive guesswork.

If it matters, I'm going through various demons as potential candidates for a character in a mid-high level team vs. team game.

generally the same as in D&D: subtract 10 or 11, whichever gives you an even number.

... I don't think there's a good method for that... not one without a bunch of headaches.

Instead I'd suggest looking at it another way (suggested in the back of the Pathfinder Bestiary). Keeping the stats the way they are and adding +4, +4, +2, +2, +0, and -2 to each as desired... that's on page B297 under "Adding Class Levels" or here (http://www.d20pfsrd.com/bestiary/rules-for-monsters/monster-advancement).

I'm not sure which Purchase that's supposed to be balanced for however...
