The supposed "humor" in that one is based upon the fact that the canonical answer is, essentially, the answer for why any entity would wish to cross a road - the fact that the agent of the "joke" is a chicken is irrelevant to the answer - and this simple answer runs contrary to the expectations of the listener (who, in theory, would be expecting the answer to the riddle to have something to do with the galliform nature of the principal actor).

Whether this juxtaposition of expectation and punchline is grounds for amusement is, as with most forms of humor, dependent on the listener.
