Some good ones I like for a Fantasy setting (varying themes and times for when best to employ them, of course):

That last one in particular. Really, anything orchestral by John Williams is solid gold as far as I'm concerned. Hans Zimmer too, while we're at it, and some of the music from Final Fantasy X and Kingdom Hearts can go well. I was never a fan of metal, rap or much to that effect - I prefer orchestral stuff.
EDIT: Some more (can't believe I forgot them):

I'd recommend checking out Cowboy (http://www.youtube.com/watch?v=n2rVnRwW0h8&feature=related) Bebop (http://www.youtube.com/watch?v=81m8_5mccgA&feature=related) soundtrack (http://www.youtube.com/watch?v=yebAniLdwh0&feature=related). Apart from that look at works of Benny Goodman, Glen Miller and Gene Krupa. Louis Armstrong might be an obvious choice, but it's harder to find his his pieces without singing (to go better as a soundtrack). It might be still cool, to have him sing at prominent taverns or somesuch.

You'll also probably be able to get some good mileage out of Blackmore's Night (my personal favorite so far is Shadow of the Moon)- it's definitely fantasy themed, but it's also quieter and won't be distracting.
For some individual songs- Broadsword and Beastie by Jethro Tull have always worked well for me. Dragon Attack by Queen might fit the bill, depending on your group, as could A Kind of Magic (the Highlander "soundtrack").
For other soundtracks, there's the obvious, but the Last of the Mohicans and the Three Musketeers soundtracks also have potential.

While not really usable during RPG's, I like these songs about RPG's:
Monster Manual by Mixel Pixel (http://www.youtube.com/watch?v=BJqZ9MMa4FE)
Dungeon Majesty by The Nitlings (http://www.nitlings.com/dungeon-majesty.mp3)

My favourite out of character song (with LEGO video): Never split the party (http://www.youtube.com/watch?v=waa2ucfgVgQ)
As for stuff that actually sets the mood, I like to steal liberally from anime soundtracks and fantasy video games. Classical or folk music can also be quite good.

The background music from the Neverwinter Night Series. Specifically NWN2's music was perfect for my group.

The soundtrack to Conan the Barbarian is just epic. And since Basil never did as many soundtracks as say Williams or Horner, it sounds a lot more original, even on a piece almost 30 years old.
