Spellhoarding Dragon Psychosis question

Does it come with the cost of losing all of the nifty dragon-centric/dragon-only spells that are sorcerer-listed like I always assumed or is it basically any spells the dragon could learn except with wizard preparation?

As far as I recall, you need to scribe and prepare spells as a wizard, but your sorcerer levels do not change to wizard, allowing you access to sorcerer only spells.

The wording on Spellcatching, where you ready a spell to counter another's spell, is such that you can add ANY spell to your hoard, from anywhere, if you have enough gems and successfully counter.
