Hello people, I need advice on what system to use to emulate the Ace Combat Series (http://tvtropes.org/pmwiki/pmwiki.php/Main/AceCombat).

Any suggestions?

I don't know the series, but you can use GURPS or some other generic system to simulate just about anything. Although, it can be quite time consuming.

Star Wars Saga Edition's space-combat rules could be pretty easily adapted to atmospheric aviation, though you'd have to stat individual aircraft yourself. That said, I'll even dare to suggest the Revised Core edition of the Star Wars tabletop put out by Wizards. Its vehicles sourcebook is surprisingly robust, and I've used it to create stats for vehicles in several other 3.5 settings. The core system isn't so great, but the vehicles' rules and stat system aren't half bad. Food for thought.

Fudge works beautifully, particularly the Fudge Dogfighting system (which has distances, positioning, tailing, and no need of a map).
