Share spells specifies that "a summoner may cast spells on his eidolon even if the spells normally do not affect creatures of the eidolon’s type (outsider). Spells cast in this way must come from the summoner spell list."

1. Does this include scrolls/wands?

2. How about potions brewed by the summoner?

3. What about other people using scrolls/wands crafted by the summoner? How about if it's the eidolon itself using the item (through UMD)?

Yes, but only if the summoner is the one using the item. Spell-trigger/Spell-completion items count as casting a spell, unless Pathfinder has changed the rules.

2. How about potions brewed by the summoner?
No. The summoner did not cast the spell. The drinker of a potion is the one who effectively 'casted' the spell. Again, Pathfinder may have changed the rules slightly.

3. What about other people using scrolls/wands crafted by the summoner? How about if it's the eidolon itself using the item (through UMD)?
No, the summoner did not cast the spell.

Share Spells (Ex): The summoner may cast a spell with a target of “you” on his eidolon (as a spell with a range of touch) instead of on himself. A summoner may cast spells on his eidolon even if the spells normally do not affect creatures of the eidolon’s type (outsider). Spells cast in this way must come from the summoner spell list. This ability does not allow the eidolon to share abilities that are not spells, even if they function like spells.

Your answer is very simple. There are two conditions that must be met in order for the Summoner to be able to use the Share Spells ability. #1 - The spell must be listed on the Summoner's spell list. That means a multiclass Sorcerer / Summon cannot cast Stone Fist on the eidolon, even though he is "casting" a spell. Stone fist is not on the Summoner's spell list, so it is not applicable to the Share Spells ability.

The second condition is that the ability must be a spell; this means that if the Summoner has taken Spell Expertise with Enlarge Person, they may cast the Enlarge Person spell on their eidolon by expending a 1st level Spell Slot to do so, but they could not use their spell-like ability to cast Enlarge Person on the eidolon.
