So, I was taking a gander at the mummy, and I saw that they were LE. Can anyone explain to me why they are or should be LE, rather than say CE?

Fluff states that they're on a "timeless vigil", serving dark gods. It's also a "usually", chaotic mummies are go. That's the fluff reason.

However, fluff is malleable, so have a ball.

Individuals mummies alignments could vary, I'd say. One can turn a CN person into a mummy & there's no provision that they have to stop being chaotic or neutral, IIRC.

Just says "Usually lawful evil" for their alignment anyway.

Could even raise the party paladin as a mummy and not have him cease being LG.

It probably has to do with the irl origin of mummies: embalmed kings, priests, and high level bureaucrats. Even in game, most mummy fluff involves a highly organized religious society. If you're chaotic, you probably don't take the time and effort to mummify your dead (which doesn't preclude chaotic mummies, jut that they're more likely to be lawful).
