So in a campaign I'm about to run I have three players.
Butcher: Goblin Fighter 2/Stoneblessed (Goliath) 3/Horizon Walker 1/Barbarian 5
Baker: The one I need help with
Candlestick Maker: Some dex based character, very sneaky about what he's chosen, it'll be sneak attack focues, and hiding focused.

As far as the Baker, We've envisioned it as a tough character. Butcher is an all-offensive character. The Candlestick Maker, because of Jack Nimble is envisioned as a dex based character.

So th basic stuff we're looking for (in a best case scenario) High Hp, High Ac, DR, Fast Healing, SR. All books are allowed, I'm apprenhensive about using Dragon Magazine on the whole. Tome of Battle confuses me but is allowed, Psionics is allowed as well I understand it quite well. Looking for level 11, or at least ECL 11. Oh and Little on the offensive side, Stone Wall Trope, Made of Iron, if you want to lose hours of your life. http://tvtropes.org/pmwiki/pmwiki.php/Main/StoneWall

It's late here, so I've not really got time to get into specifics, but it sounds like a Crusader from Tome of Battle would suit almost perfectly.
They have manoeuvres that can grant DR and healing, make natural tanks and battlefield controllers and can even do a bit of buffing on the side.

This (http://community.wizards.com/go/thread/view/75882/19871270/Tome_of_Battle_for_Dummies) is a great handbook to get an overview of what each of the classes in the book is capable of, but, like I say, Crusader sounds like it'd make a good fit.

I know ToB can be intimidating at first, but it is relatively simple once you've got the basics down, I promise!

Another reference here (http://www.giantitp.com/forums/showthread.php?t=181655), if you want a slightly more detailed perspective on the class.

Are they a reference to the nursery rhyme or the vigilante group (http://scarygoround.com/sgr/ar.php?date=20080801)?

No that's an DMPC, I like having money. He's the guy who hires the PC's for jobs.

Yeah, Crusader is pretty much the best "pure-tank" out there. For some reason I'm envisioning him as a Dwarf in full plate wearing a baker's hat in place of a helmet. Reflavor a rolling-pin as a greatclub for extra lulz.

Your description of candlestick maker reminded me of the Psychic Rogue. (http://www.wizards.com/default.asp?x=dnd%2Fpsm%2F20040723b) Maybe toss in a few levels of Pyrokinesist for the candle's flame?

How about an alchemist from Pathfinder? I believe you can just directly convert it, it's free on the SRD, and it is interesting in that it is versatile (can substitute for a caster) and can be high HP + tough.

There are a few different builds, like Dr. Jeckel and Mr. Hyde.

Jeckel stacks a buncha status effects onto bombs and throws them (get your rolls, nice and hot!)

Hyde drinks a bunch of his own special potions, goes beserk, and rips things to shreds, usually with natural attacks.

You could probably do some potion stuff from Hyde to buff yourself up, and then use the bombs. Lots of options there

Thanks but no, I'm not looking for help with the Candlestick Maker, that players got it down pat. The Baker is the only one I've been asked for help on.

Sorcadin has 'blossomed' by this point in ECL, and fits quite a few of your goals:

-High HP from temp-HP sources allows HP damage to be shrugged off quite easily.
-Can get Cha to Saves, AC, and damage, allowing you to focus on it almost exclusively
-Brings the party-face role to the team, something neither of your team-mates can really fill.

The other stuff on your list doesn't typically have 'good' PC options, but if you're allowed to shop around you might find something.

With your optimization levels, I'd suggest going:

Paladin 2/Sorcerer 4/Swordsage 2/Spellsword 1/Abjurant Champion 2
Feats:
Ascetic Mage
Arcane Preperation(to get Greater Luminous Armor)

Finish Ab-Champ then enter Sacred Exorcist while picking up Divine Might and/or Travel Devotion so that you can put all the turning attempts to good use.

This thread makes me want to make NPC PrCs based on those professions.

Just Basket Weaver Variants I think would work fine, lol.
Nothing nearly as impressive as the Commener Wearesheep.

There's a Candle Caster class in Tome and Blood that requires ranks in Candlemaking. I don't think it was rewritten to 3.5. Needless to say, it's not a sneaky guy, but hey, low hanging fruit.
