So, I just realized that with sufficient metamagic reducers, say, an undead spelldancer, this spell can be persisted. Holy crap. Let's see what can be done with a 1-2 day long time stop.

Doesn't work. While it's in the duration section, it's duration of apparent time. The effect in real time is still instantaneous, so you can't persist this. This was clarified somewhere (errata or FAQ, not sure which, and yes I fully understand it matters).

Note that it's probably still possible to cast Time Stop inside Time Stop, so if you can get it at-will (very hard before epic, doable after) you can still stay in Time Stop all day.
