Here's a simple question:

So I'm DMing a game and I threw a cleric (among others) at my party earlier. I had the cleric cast sanctuary on himself. Would the player attacking the cleric need to make a will save if he's attempting a Disarm check to grab his holy symbol?

Yes. Attended objects (such as a holy symbol) are considered to be part of the person.
