Okay, so most things that grant you attacks of opportunity in unusual situations specifically say "This does not increase the amount of opportunity attacks you can normally make".

Thicket of Blades does not have any such clause. So...does it? Say my crusader only has 10 DEX. Can he make more than one AoO if he has Thicket of Blades active?

Thicket of Blades does not give you additional Attacks of Opportunity. Your Dexterity 10-11 character can only use 1 AoO each round. Thicket of Blades only allows you to also make an AoO when somebody leaves your threatened square with a 5'-movement or a Withdraw full-round action, nothing more.
You might try to use this stance together with the Rapid Counter-maneuver from the Diamond Mind school which allows you to make an additional attack in addition to or instead of the AoO, unless you had to switch into the Thicket of Blades-stance with your swift action that very same round.
