And by playable undead I mean undead templates (even mindless) and savage progression. So far I've found the following:
Zombie (LA 0, HD 0): http://www.d20srd.org/srd/monsters/zombie.htm
Skeleton (LA 0, HD 0): http://www.d20srd.org/srd/monsters/skeleton.htm
Ghost (LA 5, HD 0): http://www.wizards.com/default.asp?x=dnd/sp/20040117a
Lich (LA 4, HD 0): http://www.wizards.com/default.asp?x=dnd/sp/20031212a
Vampire (LA 8, HD 0): http://www.wizards.com/default.asp?x=dnd/sp/20030824a
Ghoul/ghast (LA 4, HD 4): LM 35
Mohrg (LA 6, HD 14): LM 36
Mummy (LA 5, HD 8): LM 38
Vampire spawn (LA 4, HD 4): LM 39
Wight (LA 4, HD 4): LM 40
Evolved undead template (LA 1, HD 0): LM 100
Ghost brute template (LA 5, HD 0): LM 101
Gravetouched ghoul template (LA 2, HD 0): LM 103
Mummified template (LA 4, HD 0): LM 111
Ghoul (LA 3, HD 2): SS 173
Mummy (LA 5, HD 8): SS 187
Shadow (LA 7, HD 3): SS 194
Any others come to mind? Any 3.0 or 3.5 material is fine.

By the way, this will be used for a possibly upcoming (silly) campaign where all the players die (and they'll know about this).

You're missing the often-used Necropolitan, Libris Mortis. AFB, can't give a page cite.

Dragon Magazine and Dragon Compendium also have a whole lot of templates- including Bodak Creature.

Dragon 300's Wight template is more versatile than Savage Species's- since it can be applied to various nonhumanoids.

Necropolitan Template
Libris Mortis pg 115

Creature gains Undead subtype
HD increases to d12 (!!!)

Special Qualities:
Resist Control (Ex): +2 profane bonus to will saving throws to resist Control Undead spells
Turn Resistance (Ex): Gains +2 to turn resistance
Unnatural Resilience (Ex): Necropolitans heal hit point damage and ability damage at the same rate as living creatures. The Heal skill does not help necropolitans. However, negative energy heals the Necropolitan

LA: +0 but requires the Ritual of Crucimigration that causes the creature to lose a level and an additional 1000 xp.

This template is usually great for Wizards and low hd classes. It's also great for clerics who choose Rebuke over Turn undead since they'll still be able to heal themselves with their Inflict spells. Then again, I'm not sure if a cleric can rebuke or control himself...

Check out the Ghostwalk supplement. It's pretty much designed for the kind of "silly" campaign you're aiming for.

Yes- it's "adventuring after you die" but avoids them being undead by creating a different version of ghost, which is an Outsider instead.

Why are you assuming Zombie and Skeleton are LA 0? Or is that one of the houserules in play?

Maybe he confused LA — for LA 0?

In any case, having no Int score makes them pretty much unplayable.

Unless the Awaken Undead spell is used, but basically this.

There's a homebrew handbook called the Tome of Necromancy.

It has variant rules for undead and LA 0 versions of Vampires and Ghouls.

This one, as the ravens cry?

Oh!
The Dandi Wiki,
It Will make you feel icky,
And your hands kind if sticky,
Ooh, They think they're so tricky,
Every Tom, ****, and Ricky,
On the Dandi Wiki!

On the Dandi Wiki the pages are soiled,
Many good ideas have been spoiled,
With ludicrous crunch they are embroiled,
All common sense has been foiled,
But don't tell them or they'll get roiled,
On the Dandi Wiki!

Oh the Dandi Wiki ain't got no sense,
And not a shred of re-pen-tance,
There really is just no defence,
For all the crud that they dispense,
I hope this song don't cause offence,
On the Dandi Wiki!

In this case it's not danddwiki original, it's from one of Frank&K's Tomes. I haven't heard a song about them, but I can't help but feel they deserve one.

Basically, expect the material to not be horribly designed, but to be built with the assumption that rocket tag is an acceptable and desirable way for 3.5 to work.

Sorry that I wasn't specific about the source. But I guess all is fixed.

I think that the undead templates can be introduced without getting into crazy territory.
