How do Enchantments fair in Pathfinder?
Are there as many creatures immune to mind affecting effects?

Well, it's more difficult for humanoids to become immune to them, since Mind Blank gives a resistance bonus against mind-affecting effects rather than providng outright immunity.

Paladins can now become immune to compulsion spells, however, but most adventurers don't have to worry about fighting any of them.

Honestly, there are better choices than enchantment, but it's never really a complete waste, unless you're in a zombie apocalypse campaign or something. They have quite a few more options that simply trying to charm everything they come across; just make sure you invest in other schools for additional options.

A few sorcerer bloodlines open-up options for using spells against targets you normally couldn't. See undead (http://www.d20pfsrd.com/classes/core-classes/sorcerer/bloodlines/bloodlines-from-paizo/undead-bloodline)(affect undead if they were the right type when alive) and serpentine (http://www.d20pfsrd.com/classes/core-classes/sorcerer/bloodlines/bloodlines-from-paizo/serpentine-bloodline)(affect animals, magical beasts, and monstrous humanoids as if they were humanoid).

One of the eastern races also gives a DC boost, as does one of the sorcerer bloodlines.

There's also the Threnodic Spell feat, which allows you to use mind-effecting spells on the undead.

Unfortunately the prereqs for Threnodic are pretty steep (Spell Focus (Necromancy)...).

That said, i think witches are really well-suited to enchantment in PF. Grab the Misfortune Hex (all attacks and saves are "roll twice, take the lower") and hex your target the round before you enchant them. Since the DC for your hexes scales with your level, that makes enchantments work for much longer than they usually do (barring, of course, the usual "immunity to mind-affecting spells" problems).
