Is it possible to make a disarm on an attack of opportunity?

I think so because it is a melee attack and a AoO gives you a melee attack.

Yes. If it's something you could do as a normal attack action (or as one of your iteratives in a Full Attack sequence), you can do it as an AoO. Trip, Disarm, Sunder, and Initiate a Grapple are the main ones.

Sorry to piggyback, but speaking of disarms...can anyone think of a feat somewhere that allows you to use dexterity on combat maneuvers like disarm instead of strength? Something like weapon finesse?..

If you're using Pathfinder, then yes (http://www.d20pfsrd.com/feats/combat-feats/agile-maneuvers-combat).
