Found here (http://www.d20pfsrd.com/feats/combat-feats/shatter-defenses-combat---final).

This feat says that a foe you hit this round that is shaken is flat footed against all attacks until the end of your next turn, including the attacks you make this round.

Say I have 3 attacks a round.

With this, will those attacks in the first round go "not flat-footed/flat-footed/flat-footed" (if the first one hits) or "flat-footed/flat-footed/flat-footed"?

You have to hit them before they become flat-footed, so your first attack will not benefit from the feat.

That's what I figured. However, since it lasts until the end of your NEXT turn, once you get that initial attack, every attack will be against flat-footed.

So

RD 1: not ff/ff/ff
RD 2: ff/ff/ff
RD 3: (if you hit on round 2) ff/ff/ff

and so on. would it reset if you missed?

It'll be not flat-footed/flat-footed/flat-footed.

If the target continues to be under a fear effect, they will also continue to be flat-footed against you if you hit as rarely as once every 2 rounds. You'd have to flub your attacks pretty hard to have the benefits of the feat drop off against a single target. (It's more likely the fear effect that was enabling it will end, and you might not want to spend the action to re-Demoralize or otherwise replace it.)

Unfortunately, if you're an Iaijutsu master, you're probably using that stupid gnomish wrist dagger thing. And then you're probably this guy. http://media.giantbomb.com/uploads/3/34626/1093489-dampierre_large.jpg

Even if you're using gnome quickrazor, shatter defenses at least allows to spare some dignity by not using marbles in combat.

Combo it with the Enforcer (http://www.d20pfsrd.com/feats/combat-feats/enforcer-combat) feat and somehow dealing nonlethal with the Quickrazor, and all you need to do is smack the guy more than once a round. Takes 4 feats though, and only works on fear-vulnerable targets.

That's still a pretty nifty combo, tho, and Pathfinder is more generous with the feats.. you just have to find the ones that are worth having. Even if you don't port in Iajutsu it's a good feat set for a combat-minded rogue (probably with a Fighter dip to bump the BAB a bit faster and get the feats set.)
