Do what PCs do: get Steam (http://store.steampowered.com/browse/mac/). Many good games have been ported to Macs: Portal (1 & 2), Team Fortress 2, Left 4 Dead 2 (which includes 1 in the DLC), Civ V...

Assuming we're talking Mac OS X, using actual Windows isn't possible, and we're excluding online games...

Escape Velocity: Nova (http://www.ambrosiasw.com/games/evn/). Actually, I don't like Nova itself that much, but if you can get total conversion mods that let you play its predecessors (otherwise not playable on OS X), Escape Velocity (http://www.ambrosiasw.com/assets/modules/addonfiles/download.php?addon=1584) and Escape Velocity: Override (http://www.ambrosiasw.com/assets/modules/addonfiles/download.php?addon=1590), the latter of which I consider one of my favorite games of all time. Actually, most anything by Ambrosia Software (http://www.ambrosiasw.com/games/old/) is worth at least checking out.

NetHack (http://www.nethack.org/v343/ports/download-mac.html). Available for everything, including Mac. I recommend the "Tiles" version myself, unless you really want to play it in the original ASCII. It's free, also!

Antares (http://code.google.com/p/antares/): A freeware port of a pre-OS X game called Ares made by the aforementioned Ambrosia Software. It has some bugs, but I've found nothing gamebreaking.

The Incredible Machine: Even More Contraptions: I believe this is the only game in The Incredible Machine series that works on OS X, which is lucky because it might be the best.

I Wanna Be The Guy (http://kayin.pyoko.org/iwbtg/): Okay, it's a Windows game, but it runs fairly well on WINE (or Crossover:Mac, if you're willing to pay for the commercial but much-easier-to-use version of it). It's free also. Note: This game is comically hard.

King's Quest Collection/Space Quest Collection: Decent if you wanted to check out the series or if you liked them as a good (though in a number of ways they've aged quite poorly). Okay, so they're also not Mac games, but they're DOS games (except King's Quest VII) and can be played via DOSBox, which has a Mac port (actually, the DOS games don't work on modern Windows either, so the installation CD installs the Windows version of DOSBox for you). One word of warning: It's a bit tricky to install them on a Mac (especially King's Quest Collection as it's two CDs); I had to do some finagling with CrossOver:Mac to get it to work and aren't even entirely certain how I DID manage to somehow get it all to install right.

Also, Amnesia: The Dark Descent is probably the best game I've played, but can result in trauma if taken in stints greater than 20 minutes.

These are the games that live on my dock,

Free Games
Battle For Wesnoth - This is a tactical, hex based fantasy game. I consider it my light strategy game.

Lightning's Shadow - Basically, this is Tanks or Worms. It's just that you play mystical monks who shoot lightning and fire at each other.

Cheap Games
Lugaru - This is a fighting game. It doesn't have combos, it is fully 3D, the controls are actually intuitive, and there are stealth elements. Also, you play a rabbit who beats the snot out of anthropomorphic wolves, and are all sorts of glorious.

Space Chem - This is a deterministic puzzle game involving spacial scripting.

Frozen Synapse - This is another strategy game, which probably won't be on the dock very long.

DROD: Journey to Rooted Hold - This is a deterministic puzzle game in which you play a guy with a sword who chops up a bunch of horrible vermin. It's a lot of fun.

DROD: The City Beneath - See above.

DROD: RPG - This is a deterministic puzzle game, largely centered around resource management of completely finite resources. It involves a lot of narration from the main character, who is completely hilarious. The gameplay mechanics aren't up to par with the other DRODs however.

Starcraft - It's Starcraft.

Expensive Games
Dominions 3 - This is a deep, wide, fantastic strategy game with a ludicrous number of options. The UI is a bit iffy at times, but this is a glorious multiplayer game.

In addition to the other games listed here, be sure to check out Psychonauts. Also, I'm fairly sure all of the Indie Bundles are Mac-compatible, and I actually have a spare unused Frozen Synapse code if you'd like it. Shoot me a PM if you're interested.

I've been playing a lot of League of Legends in the past year or so, but the current fan-made Mac client can be somewhat annoying. It's a superb game with a large following in this community, though.

EDIT: Missed Dragon Star's Psychonauts recommendation above. My bad. I'm fairly sure Half-Life 2 hasn't been mentioned yet. All of Valve's games are top-notch, and are frequently dirt-cheap on Steam.

Lately I've been playing Gratuitous Space Battles and Dwarf Fortress on my Mac.

I've also had fun with FreeCiv and Oberin.

Oberin is a free Mac-Only MMORPG with a surprisingly deep world and one of the nicest player communities I've seen. Unfortunately, it also has terrible sprite graphics and won't run on the latest OS.

I'd also like to note that the first 2 Fallout games were ported to Mac. At this point, they might be somewhat hard to find, though.

If you like RPGs, The Witchergot ported to Mac just recently. It's available on Steam, which may be a deal-breaker for some.

Speaking of RPGs, there is the small matter of Spiderwick Software. They have Geneforge, Avernum, and a host of other good RPGs to their name, and all are available on Mac. Ambrosia Software also has a few good RPGs.

Small matter? Spiderweb makes their games for Mac first, anything else second and are awesome all around for old school RPGs in general. They're also reasonably priced for stupid amounts of hours of play if you want to explore every nook and cranny of every game. They also believe in huge demos, the kind that takes ~8ish hours to get through, so you'll have a reasonably good idea of what you're getting into. You can get the games directly from the company site or through Steam, whichever suits your fancy. [/rant by Spiderweb Software fanboy]
