Complicated instrumentals

What im looking for is music where you swear the players are hitting 4 notes or more at a time on their instruments, Through Fire and Flames level complexity and speed, that sort of thing. Preferably rock of any sort, but ill take the others as I can. Basically, the sort of music that would make most experts drop their jaws if they heard it played for the first time. Although, now that I think of it, any incredibly complex chorus harmonies would be interesting to listen to as well.

I've never been a huge fan, though. For just complex harmonies, perhaps give Nightwish a shot? I haven't been able to stop listening to Imaginaerum since I picked it up in January.

There's this one physicky instrument where you like hold your hand above it and it manipulates the pitch and frequency and stuff.
I believe they are called theremins. Pretty complex and fun to watch.

Dream theater has already been suggested, but I'll add my own little bit. They have practically mastered their instruments, their current drummer holds the record for the highest number of double strokes(hitting with both drum sticks) in a minute.

Their piece The Dance of Eternity is considered by many to be the master of all pieces. I mean if you go and look at the time changes, and what the instruments play, especially John Myung's bass solo.

Anyway if you want a general gist of their music, I suggest an Instrumedley (https://www.youtube.com/watch?v=IDRuxYt6Ga0) they did. It doesn't have their singer in it but it shows their music pretty well.

When I was describing Dragonforce to a older shred head I used:

So as to keep in the 80's shred genre...also check out Cacophony. Another duo-axe shred fest featuring my favorite guitarist of all time Marty Friedman. Also featured Jason Becker who was one of those insanely talented teenage phenoms in the mold of Paul Gilbert.

I listened to the dance of eternity, and while ill admit the music was awesomely complex, every time they did a time change, (im assuming thats what it was) its like it was awkwardly switching over to a new set of music and kept jarring me out of my enjoyment. And I WAS enjoying it greatly. But every time that happened all I could think was, "They couldnt come up with a way to make that transition smoother?"

Yeah their music takes a while to get used to. Especially the singer's voice. But once you get used to the quick transitions it's nice to listen to.

That clip was pretty cool. I knew Dream Theater has done some crazy things with music theory but I never knew exactly how much.
