Longtime DM, first time having high level characters right off the bat.

The session I'm planning revolves around dragons. Dragons, dragons everywhere.

In order for them not having to fight weeny little wyrmlings all the time, I'm starting them off at level 10.

The highest I've ever started my players off at was level 4. I'm excited to try it, but I'm scared a standard session will bore the average tenth level character.

Any advice from experienced DMs on how to handle high level characters and how to challenge them from the get-go?

Races of the Dragon has a whole chapter full of advices on dragon-themed adventures. You'd like to have a look at that.
Also, if you want to challenge your player with something different than the (metaphorical) evergreen evil red dragon there's a whole topic full of interesting new dragons (http://www.giantitp.com/forums/showthread.php?t=169209).
