In my quest of making useful spells lists, this is a list of spells that remove an enemy from combat.
The list is from an older thread (http://www.tgdmb.com/viewtopic.php?t=31950), sorted and with added descriptions (only short ones for obvious reasons).

Unfortunately Mr. FrankTrollman focused mainly on Wizard spells. Lets try to be more complete. Do not be shy, if you know a spell that remove an enemy from combat and you think it should be here, post a message and I will try to update.

Level 1
Color Spray: Knocks unconscious, blinds, and/or stuns weak creatures. (SRD)
Grease: Makes 10-ft. square or one object slippery. (SRD)
Power Word Pain: Deal 1d6 points of damage per round to one creature with 100 hp or less. (RotD)
Seething Eyebane: Subject is blinded and all within 5 ft. take 1d6 damage. (BoVD)
Silent Image: Creates minor illusion of your design. (SRD)
Sleep: Puts 4 HD of creatures into magical slumber. (SRD)
Wall of Smoke: Wall of black smoke obscures vision and nauseates those who pass through. (SpC)

Level 2
Blindness/Deafness: Makes subject blinded or deafened. (SRD)
Cloud of Bewilderment: Generates a nauseating 10-ft cube. (SpC)
Ghoul Touch: Paralyzes one subject, which exudes stench that makes those nearby sickened. (SRD)
Glitterdust: Blinds creatures, outlines invisible creatures. (SRD)
Lahm’s Finger Darts: Caster’s fingers become projectiles that deal 1d4 Dex damage. (BoVD)
Phantasmal Assailants: Nightmare creatures strike subject for 8 Wis damage, 8 Dex damage. (SpC)
Pyrotechnics: Turns fire into blinding light or choking smoke. (SRD)
Shadow Spray: Deals 4 points of Str damage and dazes. (SpC)
Web: Fills 20-ft.-radius spread with sticky spiderwebs. (SRD)

Level 3
Curse of the Putrid Husk: Subject is unconscious for 1d10 minutes. (BoVD) (Brd 3, Sor/Wiz 3)
Deep Slumber: Puts 10 HD of creatures to sleep. (SRD) (Ass 3, Brd 3, Sor/Wiz 3)
Flashburst: Flash of light dazzles and blinds creatures in area. (SpC) (Sor/Wiz 3)
Great Thunderclap: Loud noise causes stunning, deafness, and knocks prone in a large area. (SpC) (Sor/Wiz 3)
Major Image: As silent image, plus sound, smell and thermal effects. (SRD) (Brd 3, Sor/Wiz 3)
Mesmerizing Glare: Your gaze fascinates creatures. (SRD) (Brd 2, Sor/Wiz 3)
Nauseating Breath: Exhale a cone of nauseating gas. (SRD) (Cle 3, Sor/Wiz 3)
Shadow Binding: Ribbonlike shadows entangle creatures in 10-ft.-radius burst. (SRD) (Sor/Wiz 3)
Shivering Touch: Touch deals 3d6 Dex damage. (SRD) (Cle 3, Sor/Wiz 3)
Stinking Cloud: Nauseating vapors, 1 round/level. (SRD) (Sor/Wiz 3)
Vertigo Field: Creatures have 20% miss chance and possibly become nauseated. (PHBII) (Beguiler 3, Sor/Wiz 3)

Level 4
Black Tentacles: Tentacles grapple all within 20 ft. spread. (SRD) (Sor/Wiz 4)
Charm Monster: Makes monster believe it is your ally. (SRD) (Brd 3, Charm 5, Sor/Wiz 4)
Fear: Subjects within cone flee for 1 round/level. (SRD) (Brd 3, Sor/Wiz 4)
Finger of Agony: Deals 3d6 damage per round and nauseates or sickens target. (CM) (Hex 4, Sor/Wiz 4)
Ice Web: Creates webs of coldfire that entangle and deal 1d6 frostburn damage/round. (FB) (Sor/Wiz 4)
Phantasmal Killer: Fearsome illusion kills subject or deals 3d6 damage. (SRD) (Madness 6, Sor/Wiz 4)
Rebuke, Greater: Subject cowers for 1d4 rounds. (SpC) (Sor/Wiz 4)
Solid Fog: Blocks vision and slows movement. (SRD) (Sor/Wiz 4)
Stop Heart: Subject drops to –8 hp immediately. (BoVD) (Asn 4, Clr 4, Sor/Wiz 5)
Wall of Chaos/Evil/Good/Law: Wall blocks creatures of opposite alignment. (SpC) (Cle 4, Sor/Wiz 4)
Wings of Flurry: Your wings of force can attack all foes within 30 ft. (RotD) (Sor 4)

Level 5
Baleful Polymorph: Transforms subject into harmless animal. (Drd 5, Sor/Wiz 5)
Call Forth the Beast: Target wakes up chaotic evil and goes on a rampage. (HoH) (Corrupt 5)
Cloudkill: Kills 3 HD or less; 4–6 HD save or die, 6+ HD take Con damage. (SRD) (Sor/Wiz 5)
Flesh to Ice: Turns subject into statue of ice. (FB) (Sor/Wiz 5)
Friend to Foe: Make subject creature believe its allies are its enemies. (PHBII) (Brd 5, Beguiler 5, Sor/Wiz 5)
Hold Monster: As hold person, but any creature. (SRD) (Brd 4, Law 6, Sor/Wiz 5)
Illusory Feast: Subjects become dazed by illusory food. (SpC) (Sor/Wiz 5)
Magic Jar: Enables possession of another creature. (SRD) (Sor/Wiz 5)
Touch of Vecna: Deal negative energy damage and paralysis with your touch. (CM) (Sor/Wiz 5)
Wall of Force: Wall is immune to damage. (SRD) (Sor/Wiz 5)
Wall of Stone: Creates a stone wall that can be shaped. (SRD) (Clr 5, Drd 6, Earth 5, Sor/Wiz 5)
Wrack: Renders creature helpless with pain. (SpC) (Cleric 4, Sor/Wiz 5)

Level 6
Acid Fog: Fog deals acid damage. (SRD) (Sor/Wiz 6, Water 7)
Endless Slumber: Subject falls asleep and is not easily roused. (CM) (Bard 5, Sor/Wiz 6)
Entomb: Captures subjects in blocks of ice, suffocating them. (FB) (Drd 6, Sor/Wiz 6)
Flesh to Stone: Turns subject creature into statue. (SRD) (Sor/Wiz 6)
Freezing Fog: Fog slows creatures, obscures vision, hinders movement. (SpC) (Sor/Wiz 6)
Freezing Glance: Gaze freezes subjects in place. (FB) (Sor/Wiz 6)
Heartfreeze: Subject exhausted, dies in 1d3+2 rounds. (FB) (Sor/Wiz 6)
Programmed Image: As major image, plus triggered by event. (SRD) (Brd 6, Sor/Wiz 6)
Mudslide: Landslide buries, mires creatures within a 40-ft. radius. (SW) (Druid 6, Sor/Wiz 6)

Level 7
Evil Glare: Paralyze creatures with your glare. (SpC) (Cle 7, Sor/Wiz 7)
Finger of Death: Kills one subject. (SRD) (Drd 8, Sor/Wiz 7)
Forcecage: Cube or cage of force imprisons all inside. (SRD) (Sor/Wiz 7)
Hiss of Sleep: You induce comatose slumber in subjects. (SpC) (Sor/Wiz 7)
Prismatic Spray: Rays hit subjects with variety of effects. (SRD) (Sor/Wiz 7)
Rebuke, Final: As rebuke, except the subject must save or die. (SpC) (Sor/Wiz 7)
Stun Ray: Stun Ray: Subject stunned 1d4+1 rounds, only 1 on save. (SpC) (Sor/Wiz 7)

Level 8
Charm Monster, Mass: As charm monster, but all within 30 ft. (SRD) (Brd 6, Sor/Wiz 8)
Flensing: Pain and trauma deal 2d6 damage, 1d6 Con damage, 1d6 Cha damage for up to 4 rounds. (SpC) (Sor/Wiz 8)
Irresistible Dance: Forces subject to dance. (SRD) (Brd 6, Sor/Wiz 8)
Maze: Traps subject in extradimensional maze. (SRD) (Sor/Wiz 8)
Polymorph Any Object: Changes any subject into anything else. (SRD) (Sor/Wiz 8, Trickery 8)
Power Word Stun: Stuns creature with 150 hp or less. (SRD) (Sor/Wiz 8, War 8)
Trap the Soul: Imprisons subject within gem. (SRD) (Sor/Wiz 8)
Wrathful Castigation: Subject dies or is dazed and -4 on saves for 1 round/level. (SpC) (Sor/Wiz 8)

Level 9
Dominate Monster: As dominate person, but any creature. (SRD) (Charm 9, Sor/Wiz 9)
Hold Monster, Mass: As hold monster, but all within 30 ft. (SRD) (Sor/Wiz 9)
Imprisonment: Entombs subject beneath the earth. (SRD) (Sor/Wiz 9)
Shapechange: Transforms you into any creature, and change forms once per round. (SRD) (Animal 9, Drd 9, Scalykind 9, Sor/Wiz 9)
Temporal Stasis: Puts subject into suspended animation. (SRD) (Sor/Wiz 9)
Wail of the Banshee: Kills one creature/level. (SRD) (Death 9, Repose 9, Sor/Wiz 9)
Weird: As phantasmal killer, but affects all within 30 ft. (SRD) (Sor/Wiz 9, Madness 9, Mind 9)
Reality Maelstrom: Hole in reality sends creatures and objects to another plane. (SpC) (Sor/Wiz 9)
Frostfell: Intense cold turns all subjects in area into ice. (FB) (Drd 8, Sor/Wiz 9)
Detonate: Slays subject and creates 20-ft.-radius explosion that deals 1d6 damage/level (max 20d6). (PHBII) (Sor/Wiz 9)
Mindrape: Caster learns everything subject knows and can alter its memory or knowledge. (BoVD) (Sor/Wiz 9)

Stun Ray is a really powerful spell. Save or be stunned for 1d4 rounds, and be stunned for one round anyways. If you are fighting a boss not immune to stun, you can lock him down and let your party handle him.

Stun ray is indeed a ``I win'' spell, if the target is not flat out immune it loses...

Neutralize Poison can be applied to the venomous creature, usually making it a pushover. Horrible Taste against something that only has a bite attack. Are these too narrow?

Frost Breath (SpC, W/S2, C2, D2) is a pretty good one for this - targets in a 30ft cone take some damage and save vs 1 round of daze. It becomes absolutely killer when you can spellwarp and quicken it though, since it lets you dazelock something with no save.

How about Tasha's hideous laughter? Considering when you get it, it's pretty damn powerful and if the opponent fails his save, he's pretty much dead.

(Otiluke's) Resilient Sphere (http://www.d20srd.org/srd/spells/resilientSphere.htm) and Telekinetic Sphere (http://www.d20srd.org/srd/spells/telekineticSphere.htm) are like this as well. They grant reflex saves, and so aren't normally mentioned next to Forcecage, but still completely eliminate an opponent if they hit.
