What would happen to a character that died while under the effects of the spell 'Holy Transformation' or its lesser version (SpC, pg. 116)? Since they are Outsiders would they not be able to be resurrected or after the spell effect ends would they be able to be brought back form the dead?

I'd say that the spell ends with their life, just like all the other magical effects that rely on targetting a creature. They can be ress'ed just fine.
