Okay, so I am playing a game of D&D 3.5 as a dragon descended, gaining level adjustment instead of class levels whenever I want (RotD). So my question is, how does this mesh with rules for losing level adjustment (UA)?

I assume you're talking about the progression on page 70.

It really depends on what your ultimate LA will be. If you're only going to gain the Draconic template, then you'd do the normal Buyoff for a +1 LA. If you're going all the way to the Half-Dragon template, then you'll need to do buyoff for the +3 LA.

Technically you could do multiple +1 LA buyoffs, but any sane DM would consider that cheating.

Whichever template you end up with, you can still have an LA of +0 by the time you hit level 20.
