Looking for stats to use for a golem made of gingerbread. Are there rules for this kind of thing? I'm hoping for a TPK.

A TPK, eh? I might advise you: "kill in haste, repent at leisure". (Or, less cryptically, try solving problems out of game if possible, rather than facerolling PCs in a fit of pique or pent-up frustration.)

On the other hand, there's a very nice gingerbread golem on this very site (http://www.giantitp.com/forums/showpost.php?p=10546572&postcount=18), designed for 3.5.
