Is there a way, when im starting a trip or a grapple, to use DeX or WiS instead of StR?

any feat or variant will do...

I believe certain Setting Sun maneuvers from Tome of Battle allow you to use Dex on... what amounts to a Trip attack with extra awesomeness added in. You may have to take levels in Swordsage to get full use there though.

I don't know a method for grapple though, not if you're starting it. Escape Artist lets you apply your dex to escaping grapples, but that's it.

I can sort of do Cha, or Int, to Grapple.
Dip Sorcerer, or Wizard.
The spells you want are Enlarge Person (+4 to trip, +4 to Grapple) and Fist of Stone (+6 to Grapple).
You only need 11, in the appropriate stat.
