From the top of my head, Divine Crusader and Blighter.

EDIT: And Beholder Mage.

EDIT 2: Oh, and Apostle of Peace. Arguably, also Nar Demonbinder. I think that's all of them.

I think it has something to do with Polymorph/Shapechange, Assume Supernatural Ability and putting out "your" central eye while in that form.

It is very cheesy indeed. But wait, aren't beholders aberrations? If so, just be an Elan.

Yep, they are, and you should be (their are other aberations, but they tend to have HD or LA).
