I read in the SRD that the sneak can be used when a rogue's target is denied dex bonus to AC, could someone flesh out the situations and circumstances under which rogues can use and capitalise on their sneak ability?

I assume you mean sneak attack? Try here (http://www.wizards.com/default.asp?x=dnd/rg/20040217a) for a primer.

apologies, I did mean sneak attack. Thanks for the link, if anyone has enough experience with the rogue to add anything extra, be interesting too.

There's quite a few tricks to denying your opponent their dex bonus (one of two ways you get to sneak attack them). Off the top of my head:

Hit them while they're flatfooted (which they are until they've had their turn in combat).
Be unseen (Hide and the Invisibility-line of spells are the obvious ways to do this).
Force them to balance (Grease helps here).

I'm sutre others can add to that.
