What do you call the stereotypical outfit of a final fantasy red mage? The swashbuckler-y frilly collar and big brimmed hat? Is there a specific term for that?

I'm pretty sure it's just a cape and pointed hat.

Not a pointed hat (well, depending on version), but more a swashbuckler hat...hang on...images taken from http://finalfantasy.wikia.com/wiki/Red_Mage

As you can see, the hat style is very different for Tactics Advance (and the FF9 red mage NPCs), but the iconic headgear goes back to the cavalier hat (http://en.wikipedia.org/wiki/Cavalier_hat)(with a feather). Haha, finally found what it's commonly referred to!

When I was cosplaying as red mage for ACEN 12 years ago, a friend happened to have the hat in felt from marching band. We spraypainted it red. Then my mother made me an awesome cloak. Other than that I just wore a red shirt and pants. If I were dressing up again I'd probably spend more time on that, but decent looking red pants are hard to find for guys.

Honestly, for a term for the whole look? I think "cavalier" would get the point across. "Musketeer" might, depending on what movies you've seen recently.

Edit: Ooh, I wonder if the Musketeer crossover is why it's often considered "swashbuckler," due to similar movie fighting styles (swashbuckler generally refers more to pirate).
