Quick question: Can a character cast an immediate action spell during the time she/he's casting another spell (a full round action spell, for example) without breaking concentration. Can she cast one if passing a concentration check?

Nope. Immediate actions only ever happen when it is not your turn.

You could, however, cast a spell that is a swift or free action. Such a spell would have to be cast either immediately before or immediately after casting the full-round spell.

The SRD doesn't explicitly say whether you can use a swift and full-round action in the same turn or not, but most (all?) GMs allow it.

The situation is that during the casting of a full round spell, the caster may take injury. Can it cast an immediate action spell to avoid that injury and avoid the resulting concentration check?

No no no no, you've confused a fair bit.
Immediate Actions can be taken in your turn like swift actions.
Swift actions never happen during another action, only between them.

So you can use a swift between attacks, or between casting a spell and moving, but not in the middle of casting the spell.

Ok, my mistake, you can use an immediate action on your turn. However, an immediate action on your turn is, in all ways, the same as using a swift action. A swift action can be used on your turn any time a free action can be used.

Hmm, free actions aren't specifically stated as not being possible during a full-round action.

Yes, you can, but that action cannot be another spell.

To cast a spell, you must concentrate.

You can’t cast a spell while concentrating on another one.

So you could, for example, reallocate your essentia while casting a spell, or get an item out of your Glove of Storing. But you couldn't cast Delay Death while summoning a monster.
