Brief rules clarification please.

Our D&D 3.5 party will be going up against an adult white dragon. We're level 8 and the dragon will be a CR 10 encounter.

Obviously protection from elements is required, however with the spell fire shield:

"Any creature striking you with its body or a handheld weapon deals normal damage, but at the same time the attacker takes 1d6 points of damage +1 point per caster level (maximum +15). This damage is either cold damage (if the shield protects against fire-based attacks) or fire damage (if the shield protects against cold-based attacks). If the attacker has spell resistance, it applies to this effect. Creatures wielding weapons with exceptional reach are not subject to this damage if they attack you."

So, would the dragon be subject to fire damage with every attack it would make - i.e. if the dragon attacked with a bite and 2 claws I would have 3 chances at damaging it? Or is it once per turn?

Any other tips on taking this guy down?

Fire Shield does damage on every attack.

This is what makes Mass Fire Shield slightly broken. It's the same number of levels higher than Fire Shield as most of the other Mass spells are to their counterparts, but while all the other Mass spells enhance touch spells Fire Shield is personal and is thus getting an extra boost.
