Hey everyone this is an easy question.

I have an upcoming scenario where my group will be running into an outpost with a bunch of dead corpses.

I wanted to have a low level monster / creature who eats the dead and or skins of the dead.

The challenge needs to be around CR5-6, but most of the creatures I keep thinking of or finding are CR 9+

Any suggestions or handy links would be greatly appreciated.

Personally id make an intelligent undead or a horde of low level zombies. Giant flies would also work. What about a vulture variant?

Otyughs (http://paizo.com/pathfinderRPG/prd/monsters/otyugh.html#_otyugh) are CR 4. Throw on the Advanced or Giant template to make it CR 5, or both to make it CR 6.

Generally, they eat garbage and trash, but if they stock carrion in their lairs, they probably eat it too.

Otyughs spend most of their time in these filthy dens, which they keep constantly filled with carrion, dung, and worse sorts of stinking effluvia.

Giant whiptail centipedes (http://paizo.com/pathfinderRPG/prd/additionalMonsters/centipede.html#_centipede,-giant-whiptail) are carrion eaters, and are CR 3. And they are huge sized.
Fungal crawlers (http://paizo.com/pathfinderRPG/prd/additionalMonsters/fungalCrawler.html#_fungal-crawler) are also CR 3. The Giant and Advanced templates combined will make it CR 5.

You mean like this variant (http://www.d20pfsrd.com/bestiary/monster-listings/aberrations/otyugh/otyugh-corpsefeaster)?

I like this option, but I am still open to others!

Ghouls seem to be a natural choice, considering their tastes. Why not (as Exirtadorri and Jeraa have suggested) either provide a large number of these creatures, or advance the template for a few of them. You could also do both, which would provide you with some trash mobs and a good big bad or two. You might even give the advanced ghouls some rudimentary SLA's (as long as they make some sort of thematic sense) to beef them up.

It really depends on what you want to do with your campaign. If it's just a kick-in-the-door dungeon crawl, it really could be anything, as long as it's atmospheric and fun. Botfly swarms are a favorite with one of our DMs. If you're trying to build a larger story here, intelligent undead might work due to the fact that they can be interacted with before they are either killed or placated in some manner. They may actually become characters in their own right.

if you're looking for some REALLY low level monsters, you could have a bunch of vultures attack them. (ala diablo II) it may be kind of boring though.

My money is on Otyughs, Carrion crawlers or a combination of both fighting over the 'food'

Otyughs are actually quite nice creatures once you get to know them, more than happy to live off of refuse and trash.
