What are good arcane voodoo or/and witch doctor spells that you think fit within the archtype of that sort of caster?

Curses, all kinds of debuffs, animate dead, speak\commune with dead, etc.

More or less necromancy spells imo.

Charm Person and other mind-control spells fit the theme of "curses and hexes" nicely

Baleful Polymorph, of course! Hexing your opponents into toads is a lot of fun. Other than that, the animal buff series (Bull's Strength etc) seems appropriate.

Divination is another school with a strong voodoo theme - roll those knuckle bones. Omen of Peril is perfect for this use, but it's a divine spell.

I would recommend checking out the witch spell list from the DMG. It's not a complete class, but an example of how a DM can make a new class by altering spell list/class features of existing classes. IIRC, it has a mix of divine and arcane spells and should work very well for a shaman-type: curses, divinations, some shapechanging, that sort of thing. Then ask your DM if you can add omen of peril on to the spell list (really, it's that fun).

If its a divination, Omen of peril can be attained via advanced learning from the unseen seer advanced learning.

Presumably you mean the pop-culture type voodoo, in which case nightmarey, phantasms and shadow stuff would fit in too. Shadow conjuration, nightmare, phantasmal killer. Complete Mage seems to have a lot that fit - boiling blood, torrent of tears, fever dream, ghost lantern, nightmare terrain, among others.

If you want something that matches the real-world religion a bit closer, the binder's pretty much a fantasy copy of Haitian vodoun: draw the spirit's symbol in the ground and bargain for the use of the priest's/binder's body.

So far people have listed Enchantment, Divination, Necromancy, Transmutation and Illusion.

Not so much spells, but something that would be interesting is alchemical items and potions attached to the body in the form of bones, rings/loops and other trinkets sewn all over his body. When he wants to use them he rips them off his body.

If you take the Oneiromancy line of feats then you get access to dream and nightmare related spells, which tend to be very witch doctory.
