In your opinion, should yumi be a longbow which has the special exception of being usable while mounted, or should it be a composite longbow?

It should probably be both, really, but for game balance purposes I guess you could just make it useable from horseback.

I confess I never understood what the heck D&D thinks it's doing with bows in general...

I'd just go with Composite Longbow. Not to mention that logically, at the table, there's no one I really see who picks Longbows that are not Composite. They're too expensive to be using as just an emergency ranged weapon, and if you don't have the strength for Composite a Crossbow is generally a better option. If you do have the strength, even just a 13, there's no reason why you'd pick a Longbow over Composite +1 Str Bonus.
