Can someone make me a list of spells that create walls of solid materials?
like wall of stone or wall of iron...
how many more are there?

and after that, is there a way to change the type of the material of the wall
without casting a diff spell? for example..
cast iron wall -> get a wall of iron
cast iron wall -> get a wall of rusted iron
cast iron wall -> get a wall of tempered iron

cast stone wall -> get a stone wall
cast stone wall -> get a marble wall
cast stone wall -> get a sandstone, or any other type of stone wall...

If, as I think you are, looking for sources of instant materials, there is:

Stone Metamorphosis, 4th Cleric or Druid, out of FR: Und. Lets you turn any stone into any other stone, barring precious or semi-precious stuff.

There is also,

Wall of Earth, 4th Druid, from Spells & Spellcraft
Wall of Wood, 4th Druid, from Moon Elves
and
Wall of Crystal, 5th Cleric or Wizard, from Vigil Watch: Secrets of the Asaatthi.

All instant, creating 5'x5' per level walls of the material indicated.

Edit: There is also using Invisible Spell metamagic on Wall of Iron, which should basically give you a Wall of Nephelium, a special material presented in Sunless Citadel that is basically transparent iron. Doing the same on a Wall of Stone ought to produce quartz or other clear crystal, but that's logic speaking, not game rules.

Given the way that Wall of Stone specifies that the "wall" has to join with existing stonework, I'd always assumed it was formed of the same type of stone as you were anchoring it to.

There's a clause about describing spell effects. You're actually free to describe the wall of iron any way you like, so long as it's iron and has no mechanical impact. So... yeah.

A wall of "rusted iron" would be iron oxide, and thus not iron. Ergo, technically, the spell cannot create it.

Not quite a wall, but Blockade, a 1st level Druid/Ranger/Wizard spell from Complete Scoundrel creates a 5 ft x 5 ft x 5 ft cube of solid wood.

You should be able to use spells like stone shape and fabricate also. If you include magical items there is the lyre of building.
