In what book does one find rules for alternate paladin mounts? I know in 3.0 you found them in Defenders of the Faith, but I'm sure there's a 3.5 set of rules.

It's in the DMG, page 200-something, nested between alternate familiars and animal companions.

To be precise, Dungeon Master's Guide, p. 204/205.

Iirc, the Draconomicon also has rules and information about "dragonish" creatures and true dragons as paladin mounts.

Races of the Wild p155Just a note, but the elf paladin substitution level for the unicorn mount royally sucks. According to DMG page 204, any paladin can get a unicorn mount at their 6th level.

The only downside to simply waiting until 6th level is that for unicorns there's a footnote on page 205 that says "Traditionally, unicorns only allow female human or female elf riders." which is not a ban on anyone else using them, it's just "traditional".
